3-4 large russets
Deep fry at 350F for 8-10 minutes until lightly golden and tender
1 Tbsp oil
1/4 cup tomato paste
4 cloves garlic
1 Tbsp chili flakes
2 tsp cayenne or Cajun
Salt to taste

Finish with lemon zest and juice, and 1/4 cup chopped cilantro!

Something I find so cool is the influence Arabic culture has on Portuguese culture. We have so many similar words in our languages, similar dishes and ways of cooking and so many similarities between our people.
