Everyday when closing we put the trash can in the freezer. Somedays we can fill 2 trash can full. Than on dumpster day we dump all the trash cans the night before. It was always fun to see who can sell the most. We also bag up fish heads and freeze them for crab bait for customers. We also sold our big fish head and bones to Chinese restaurants. They'll make fish head soup. There's always a way to make tips on the side. Takes a certain person to work a market but I enjoyed everyday. You know you're good when you can get stone and cut better. Lol

Crazy how much h wholesale seafood has gone up. I remember getting gallons of north carolina oysters and sea scallops for 35-40$ a gallons

I just finished up butcher school. Obviously different than fish, but a lot of similarities too, love the vids.
