This is another good quote from William C. Roberts.

If I were to give it a HUGE benefit of the doubt, the French Paradox is why we say saturated fat is a 'risk factor' for CVD, and not, "saturated fat WILL ALWAYS cause CVD PERIOD." Smoking is also a risk factor, but a study showed some men in Guinea were heavy smokers but showed low cases of CVD, does that mean smoking is off the hook now? Of course not. This was a tactic used by tobacco deniers in the 80s. But also know, that French rates of CVD are aren't really low, just lower than Americans.

The relationship between the hemodynamic shear stress and atherosclerosis is simple: the required precondition for atherogenesis is LDL capture by the elastic fibers in the membrane underneath the endothelial layer, mostly by the heparan and chondroitine sulfates. And the shear stress influences the expression of these fibers. More stress - more fibers - more LDL is caught - more atherosclerosis.

I've just finished these three videos, very nice. To answer to genericcomment, there is NOT French paradox. The first cause of mortality in France is heart disease. The French scientist who coined the term " French Paradox" in the 1980s had to apologize to the scientific community and acknowledge he was wrong.

have u considered doing a video on "the french paradox"? Paleo types love to bring them up for a lot of stuff. Is the french paradox just a big lie? do they really get away with eating cholesterol, high amounts of saturated fat and live healthy lives?

I'll have more on this in the new videos but the current set covers this pretty well, too. Basically, animal foods and whole plant foods both are great for satiety. They both limit the tendency to overeat. People are able to accomplish reduced energy consumption on both types of diets and that will improve numbers over the short term. The difference is that the low carb diet gradually deranges glucose metabolism and insulin sensitivity. The low carb approach has a long term cost.

My educated guess as to why atherosclerosis forms in arteries, not veins, would be that the blood pressure is higher in arteries.

The proportion of fat in the diet from grain-based mixed dishes, higher-fat snack foods, and higher fat potatoes has increased to partially offset reductions in fat from dairy, red meat, and added fat categories. Food sources of fat differ by race/ethnicity and age. The percentage of fat from fast foods and ethnic foods increased over time from 1 to 11% of total fat. The ratio of visible to invisible fat declined considerably.
