Prep time: 30 minutes
Cook time: 20 minutes
Total time: 50 minutes

Ingredients:
►1 qt (950mL) filtered cold water
►4 2-inch pieces (or 10g) of Kombu
►12g Bonito flakes

Instructions:
►Add kombu to water
►Let soak 30 mins until softened
►Heat over medium high
►Right before it simmers, immediately lower heat to low
►Maintain temp of 170deg F (76C)
►Add bonito flakes and steep in hot liquid for 15 mins
►Remove kombu and strain liquid through mesh strainer
