There is a legend related to the hairy tofu. It is said that the dish was invented by Zhu YuanZhang (朱元璋, the first emperor of Ming dynasty) during the war with the Mongolians at the end of Yuan dynasty. The people rewarded Zhu's army by giving them lots of tofu, and it was so excessive that the tofu started to grow "hairs". To avoid wasting food, Zhu ordered the army chefs to deep fry the tofu and then added lots of other flavors and ingredients, and the hairy tofu dish was born.

Fermented foods always has certain edible bacteria or mold, like french cheeses, sauerkraut, chocolate even. I absolutely love learning about the diverse foods in China!

And you speak it so fluently (as far as I can tell).

Gone seem to be the days where western people would think Chinese was impossible to learn.

we had hairy tofu in yunnan, stirfried with egg and green onions, and it was SOOO good, like super umami, we miss it to this day.

From what I learned edible mold is usually completely white and in other hairy tofu videos the mold was also white so this mold having some darker parts is slightly freaking me out 😭 (my fat ass would still eat this)

Blue is eaten for its mold and some cheese that illegal to export from France has actual mites in there lol

I would love to know of the health benefits of this tofu. I bet there are some. That dish looked yummy. I would enjoy it I think!
