Thank you! It would work with fatty cuts. One of the uses for these bags is making cured pork, like prosciutto. For that process, they use pork shoulder. I'm planning on venturing deeper into this cured meat stuff.

I always made beef bacon from the cap off the beef rib. It has the best look for bacon and it is good cured and uncured. I started this in my early days of meat cutting in 1970. The guys in the shop thought i was crazy and they said no one will buy that, huh, we couldn't keep it in the self serve case, so we started buying the caps.

That looks excellent! all the juices and the color. Yeah you can tell its cooked through when you are searing it and the color still remains the same dark red.

How would I approach the curing process if i dont have a vaccum pack machine or the special gas omitting plastic bags?
