This Fall Harvest Salad is packed with plant-based goodies, from brussel sprouts to kale! It is perfect for all your holiday get-togethers.

Recipe:
1 Cup brussel sprouts, halved
1 medium sweet potato, diced
2 Cups kale
2 Cups cooked quinoa
1/2 Cup Walnuts
1/2 Cup pomegranate

Dressing:
1/3 Cup tahini
2 Tbsp apple cider vinegar
1 Tbsp maple syrup or date pate (optional)
2 cloves of garlic, finely chopped
Juice from half a lemon
2-3 Tbsp water, to reach desired consistency

kale needs to be massaged preferably in salt and lemon jiuce to make it palatable
