When baking, put the cookies tray on which level of oven stack? And put the oven heat both up and bottom?

For the cut out cookies did you have to do the same thing? Put the egg white all over it?

Great recipe but how do you keep the cookies from sticking to the counter or changing shape after using the cookie cutter when you try to pick them up to put on the baking sheet???

Put them in a bag and put bread in the bag it really works

An easier way to roll it into a log is to wrap the dough on some plastic wrap and then roll it out while it's in the plastic wrap.
