The Soul stone has some wisdom that comes with it and its a sentient entity. For someone to get the Soul Stone they had to be willing to sacrifice everything to attain it. Also it seems the stone was the most difficult to attain. Whoever put the curse/price for it, knew that it would be a key stone. Probably the most powerful... Thanos was willing to give up the last person he cared for, for the sake of the universe....unlike Captain America who refused to kill vision. That was entirely the whole movie.
