Recipe:
Ingredients-
For the Cafreal Paste:
• 1/2 cup coriander leaves
• 8 garlic cloves
• 1/2 inch ginger
• 3-4 green chillies
• 1/4 teaspoon turmeric powder
• 1/2 teaspoon black peppercorns
• 1/2 teaspoon coriander seeds
• 3-4 cloves
• 1 inch cinnamon stick
• 1/4 teaspoon cumin seeds
• Salt, to taste
• 3 tablespoons coconut toddy vinegar
• 1 teaspoon jaggery powder
• 1 tablespoon oil
• 1 ice cube
For the Mac & Cheese:
• 1.5 cups boiled macaroni
• 3 tablespoons butter
• 3 tablespoons flour
• 1 cup mozzarella cheese (reserve 1/4 cup for topping)
• 1 cup sharp aged cheese
• 1 cup milk
• 1/2 cup pasta water
• Salt, to taste
• Black pepper, to taste
For the Topping:
• 1/4 cup panko crumbs
• 1 tablespoon melted butter
Method:
• Blend all the ingredients for the cafreal paste with an ice cube until smooth.
• In a pan, melt butter and whisk in flour. Cook until golden brown.
• Add the cafreal paste to the roux and sauté until fragrant.
• Gradually whisk in pasta water followed by milk, bringing the mixture to low simmer.
• Season with salt and pepper and mix in the boiled macaroni.
• Stir in the cheeses, reserving 1/4 cup of mozzarella for topping, and mix on low heat until melted and well combined.
• Transfer the mac and cheese to a greased casserole dish and top with the reserved mozzarella and some cheddar.
• Toss panko crumbs in melted butter and sprinkle over the cheese topping.
• Bake at 190°C for 10 minutes or until the panko crumbs are golden and the cheese is melted.
• Serve hot and enjoy!
