Nothing but respect for his skills. In the episode from san antonio where they lower the burning wood into the pit in a metal water trough. It is galvanized steel. PLEASE don't use galvanized metal. It gives off poisonous gases. Use stainless or cast iron. The food could easily soak up the poisons. Again nothing but respect for his skills.
