Warning — Making these for dinner guests is like giving milk to a stray cat - they'll never leave. I know from experience and that was before Pastor Pittman took it up a notch by smoking the cream cheese.

Hey Matt…I made some Texas Twinkies tonight for our family and everyone loved them! The only thing I did different was we had left over smoked pulled pork, so we used that instead of brisket. Thanks for sharing this with us!

A few weeks ago I had my entire family here in TX visiting from Tampa, FL. Between them and my kids, we had 21 people over, so I fired up the smoker and made brisket, burnt ends, pulled pork, and smoked mac n cheese, all following the videos from the Meat Church. They all loved it and raved about it. Now I wish I had made some of these as well.

When I read "Texas Twinkies" I immediately thought of Hutchins BBQ in Frisco. My wife and I drive to that location from Plano even though another location is closer. Two Texas Twinkies are a meal for me, with broccoli slaw, the best I've ever tasted. 😎👍🏻💯

I didn't have any brisket on hand, but I used this recipe as a guide to make some jalapeño poppers for the first tailgate of the season. They turned out delicious, but I had to use vegan cream cheese (seasoned with Honey Bacon rub) because one of my guests is allergic to dairy and I didn't want to leave her out with anything on the menu. If you're someone who is in the mood for heat, use vegan cream cheese. It doesn't really taste any different in a popper, but it doesn't contain any casein, so it doesn't do anything to temper the heat of the pepper. I found that out the hard way today (which is generally fine, but I wasn't in the mood for that much heat today).

Oh my gosh!!!
I couldn’t wait to try this recipe.
However, I had a few poblano peppers, and ground beef.
I served it with a side salad with a lemon vinaigrette dressing.
Oh good grief!!
We scarfed that down like a hungry tiger on a fresh kill.

Thank you for posting this video, and keep them coming.
I have learned so much from you.
Eventually, I will confess to my family and friends that my grill-genius is thank to you 🤣

Gotta love a Texas Twinkie!! Many days I've picked up a 2 meat plate at Hutchins BBQ and added 1 Texas Twinkie....the 2 meat plate ended up as lunch or dinner the next day. For sure it's enough to be a meal...especially if you add a cool side or two!!

For cleaning out the insides use a metal 1/8 tsp measuring spoon. Sounds like an insignificant thing but I've found it to be the best thing for cleaning my jalapenos. Fits perfectly inside the pepper.

Also, use a piping bag or zip top bag with a corner cut to put your filling in the pepper. These are so labor intensive I do everything I can to cut the time down

I’ve made these twice now. The first was Aggie vs Arkansas tailgate at Jerry World. I got feedback from folks they were a bit on the spicy side. Someone told me to blanch them in ice water after the smoke pepper step. That did the trick. Also congrats Goldee’s for that Texas Monthly #1 rank!
