Make sure when your removing the silver skin, to angle your knife blade upward. That way you don't remove any meat. Also, keep in mind that all of the trimmings, including silver skin, can be used for beef stock.

Just bought two tenderloins at sprouts for 9.99 a lb plus my 30% discount cause I am a meat clerk there. I got a steal for some good ol prime.

You are not going to believe this but I got a whole sams club usda PRIME Tenderloin for $13 a lb. I thank you for helping me save tons of money from buying at places like Lynz, snake river, Chicago steak and Kansas City steak.

I have been getting boneless ribeye from sav a lot in Ocala Florida for $4.99/lb. and I think the Harveys has it about the same for the last year. Cant imagine paying more for meat because it is the best taste for me at home. I understand if you had a celebration and wanted the visual....or tradition.

Majority of that is Tenderloin. Filet Mignon is only the tip of the loin "short loin" just behind the ribs. That cut is mostly from between the top sirloin and the sirloin.

Bought a 5.8 lb pre-trimmed Choice Costco beef tenderloin for Christmas party this year. First time (why do I always do firsts for holidays? Love living dangerously?) and it was perfect. Learned butcher’s tying on youtube, used a mash of two recipes (dry in the fridge, low & slow, sear last, then an herb butter topping) brought it sliced on a platter, and people thought it was catered. Spent the $ on good meat, used the whole thing (tied the tail under) ridiculously easy cooking, done & delicious. Prime totally unnecessary for tenderloin, as per online advice. Instant read thermometer is your best friend.

I shopped all over my neighborhood to find the best price on beef fillet. While Costco and Sams carries it for $12-$13/lb for a loin like you mentioned, the best price I found was at Gordon Food Service for $9.35/lb where is it consistently between $9-$10/lb and it is Choice Grade. While Costco and Sam's have good meat, their prices have not been very competitive lately.

I paid $10/lb at Aldi. However, this was made in 2011, and the price of beef does fluctuate. I am a cattle farmer, if I recall correctly, beef was almost record high back then.

These come in a plastic food safe bag that is excellent to keep unopened in your refrigerator for aging. Age it 1 - 3 weeks, depending on use by date, to make more tender and flavorful.
