Samosas Recipe (Serves 8)
For the filling:
* 500g potatoes (starchy, peeled and diced)
* 200g frozen peas (or fresh, if available)
* 1 onion, finely chopped
* 2 garlic cloves, finely chopped
* 3 cm piece of ginger, grated
* 1 green chili (optional), finely chopped
* 1 tsp ground coriander
* 1 tsp ground cumin
* 1 tsp turmeric
* 1 tsp garam masala
* 1/2 tsp salt (or to taste)
* 2 tbsp fresh coriander, chopped
* 2 tbsp lemon juice
* 1-2 tbsp oil for frying
For the samosas:
* Ready-made filo pastry or samosa pastry sheets (available in many Asian or Indian stores)
* You can use samosa sheets (found in Asian or Indian stores) or filo pastry as an alternative.
For the sauce:
Mint Yoghurt Sauce:
* 150g Greek yogurt
* 1/2 cucumber, finely grated
* 1-2 tbsp fresh mint, chopped (or 1 tsp dried mint)
* 1 tbsp lemon juice
* 1 tsp sugar (optional, depending on your taste)
* Salt to taste
* A pinch of ground cumin (optional for extra flavor)
Instructions:
Samosas:
1. Make the filling:
* Boil the potatoes in water until tender but not too soft. Drain, let them cool slightly, and mash them.
* Heat 1 tablespoon of oil in a pan and sauté the onion, garlic, ginger, and chili until the onion is soft.
* Add the spices (coriander, cumin, turmeric, and garam masala) and cook briefly until fragrant.
* Add the boiled potatoes, peas, and lemon juice to the spice mixture and mix well. Season with salt and fresh coriander. Set aside to cool.
2. Shape the samosas:
* If using filo pastry, cut it into long strips about 10 cm wide.
* Place a spoonful of filling at the bottom of the pastry strip and fold the pastry over the filling to form a triangle shape. Continue folding until fully sealed.
* Seal the edge of the samosa by brushing a little water along the edge to ensure the pastry sticks.
3. Fry or bake:
* Heat oil in a deep pan or fryer to 180°C (350°F).
* Fry the samosas in batches until golden brown and crispy (about 3-4 minutes). Drain on paper towels.
Mint Yoghurt Sauce:
1. In a bowl, combine the Greek yogurt, grated cucumber, fresh mint, coriander, lemon juice, and salt.
2. Mix well and add a pinch of ground cumin if desired for extra flavor. Chill in the fridge until ready to serve.
Serve: Serve the hot samosas with the refreshing mint yoghurt sauce. They are perfect for a party or a light meal!

* If using filo pastry, you can bake the samosas in the oven at 180°C (350°F) for about 20-25 minutes, until crispy, for a less greasy version.
