Crunchy Breakfast Tacos

One of the best things for breakfast is crunchy breakfast tacos! 7 Smart Points for 3 breakfast tacos on #teamblue on Weight Watchers.

I pretty much use different ingredients every time I make these - you could call them leftover breakfast tacos - because I throw stuff that needs to be eaten in my fridge.

For these breakfast tacos I added:

2 eggs
2 chopped baby bell peppers
5 slices pepperoni
2 tablespoons corn (from frozen)
1/4 cup cooked wild rice
1/4 cup Trader Joe's shredded Mexican cheese blend
Trader Joe's green dragon sauce (could add your own hot sauce)

In a small skillet, add the peppers and wild rice, cook for several minutes, crack 2 eggs in the pan, and scramble. Add the cheese and stir for another minute, remove egg mixture from the pan.

Wipe out the same skillet so it's clean. Microwave 3 corn tortillas for 30 seconds - this makes them more pliable - so they won't tear.

Divide the egg mixture between the 3 tortillas. And here is the important part - cook low and slow for 5-7 minutes each side (I know that's a long time!) but the corn tortilla gets super crispy.

If you don't have that brand of corn tortillas - I also love Mission Brand Extra Thin corn tortillas.
