Potato Karela Recipe
Ingredients :
3 Karela (Bitter Gourd), cut into desired shape
Salt, as needed
1/2 tsp Turmeric powder
1/2 Lemon, squeezed
1 tsp Peanut oil
3 cloves Garlic, crushed
1 sprig Curry leaves
Green chilli, as per taste
1/2 Onion, chopped
1 small Potato, chopped
Red chilli powder, as per taste
1 tsp Jeera (Cumin) powder
Garam masala, optional
Method:
1. Place the cut karela in a bowl. Add salt, turmeric powder, and lemon juice. Mix well and set aside for half an hour.
2. After half an hour, squeeze the karela to remove excess water.
3. Heat 1 tsp peanut oil in a kadai over medium flame. Add crushed garlic and sauté.
4. Add the squeezed karela to the kadai and cook on medium flame until it is half-cooked.
5. Add curry leaves, green chilli, and chopped onion. Mix well.
6. Add the chopped potato to the kadai and mix. Do not add water; allow it to cook in its own steam.
7. Once the vegetables are cooked, add red chilli powder, jeera powder, and garam masala (optional). Mix well.
Serve hot. Enjoy!
Tip- Use lemon to reduce the bitterness of the Karela. No need to remove the seeds!
