I tried it and turned out with no cracks or didn't sink! Perfect texture and flavor. I previously tried a mini cheesecake recipe twice, and it cracked and sank. These turned out with a flat surface and no sinking. I highly recommend but here are some tips

- use a good brand for cream cheese. I used Philadelphia cream cheese
- you can mix with your hand instead of hand mixer
-soften cold cream cheese by putting it in hot, not boiling water (unwrapped) for about 15 to 20 minutes and change the water and flip the block of cream cheese every now and then.
-same can be done with cold eggs. Put it warm water until not cold anymore.

I MADE THESE!!!
They tasted amazing & were perfect little sizes. More of a heavy cheese cake, (not fluffy) but maybe I over mixed.
1) Make extra crust, b/c I found it was too thin & I had extra batter so ended up with 18 instead of 12 cupcakes
2) Leave in the stove after u turn it off for 10-ish minutes. Then room temp for 20 min before you put in the fridge
3) I added 1/4 cup of Bailey’s Irish Cream
4) I added some melted Chocolate on top as a swirl for design.

Trust me these are the best bite size cheesecakes! Made exactly as listed in the recipe and they turned out amazing! Got a batch of 13 mini size cheese cupcakes.Added some blueberry compote on top and they turned perfect !

I’ve made these and let’s just say they were all gone!!! I think I added more cookies than butter the first time around so my crust was little more crumble/powdery like texture, but the second time around I added more butter and it was the perfect brown color! I also added a little bit of uncooked rice underneath each cupcake wrapper to absorb moisture. I always come back to this video for the perfect mini cheesecakes bites!

Made this for thanksgiving ! Came out amazing everyone loved them. I was a bit concerned they wouldn’t come out great since I didn’t have a mixer so I just had to mix everything with a whisk but they came out just fine! I added some strawberry fruit spread on top after they’d been in the fridge for a day.

thank you so much for this recipe! I honestly never bake. Ever since we are in lockdown during the holidays I wanted to make some homemade things. I made this recipe today and I fel in love with this cheesecake! The taste is amazing, not to sweet, not to heavy. This is a great and easy thing to make for the holidays. I am also planning to make some lemoncurd tomorrow so I can put it on top of this cheesecake.
