Mazedar Alu Baingan Ki Sabzi || Potato and Eggplant curry Recipe By Homely Flavors

**Ingredients:**

- 500 grams Baingan (eggplant), diced

- 2 medium-sized potatoes, peeled and diced

- 2 medium onions, finely chopped

- 2 tomatoes, finely chopped

- 2 green chilies, chopped

- 1 tsp ginger-garlic paste

- 1 tsp cumin seeds

- 1 tsp turmeric powder

- 1 tsp red chili powder

- 1 tsp coriander powder

- 1 tsp garam masala

- 1 tsp mango powder 

- 1 tsp dried fenugreek leaves 

- Salt to taste

- Fresh coriander leaves, chopped (for garnish)

- 3-4 tbsp oil

**Instructions:**

1. Heat oil in a pan. Add cumin seeds. Let them splutter.

2. Add ginger-garlic paste and green chilies. Sauté for a minute.

3. Add chopped onions and sauté until they turn golden brown.

4. Add chopped tomatoes and cook until they become soft and oil starts to separate.

5. Add diced potatoes and cook for 5-7 minutes, stirring occasionally.

6. Add diced baingan (eggplant) and mix everything well.

7. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

8. Add some water and cover, cook on low heat until potatoes and eggplants are tender. Stir occasionally to avoid sticking.

9. Once cooked, add mango powder, fenugreek leaves and garam masala, mix well.

10. Garnish with fresh coriander leaves.

11. Serve hot with roti, paratha, or rice.
