The corn flakes are very important to this recipe as they keep the potato mixture below very moist. We’ve been having this casserole for Thanksgiving for the past 20 years; I made it one year without the corn flakes and it just wasn’t the same, in fact it was terrible. I buy a family size box of the cereal every few years, crush than all ant store them in the freezer so when it comes time I just pull out the measured amount and add the melted butter. Zip Zip… they freeze very well. You can use any cream soup in this recipe; cream of celery is very good. I also use a finely chopped small onion and of course salt and pepper, which realize that you’re seasoning 2 lbs of potatoes so you’ll need more than you think. I usually go with a tablespoon of kosher salt ( less if using table salt), and 1/2-3/4 of a teaspoon of pepper. Bake and dive in. One delicious dish!!

Why not leave the melted butter in the measuring cup ? Then add corn flakes to the cup?

You could just pour the melted butter into the zipper bag of crushed corn flakes, then mix together.
