Here is what you'll need!
INGREDIENTS
1 sheet Puff pastry
300ml milk
2 egg yolks
80g sugar
1 teaspoon vanilla sugar
20g flour
20g corn starch
30g butter
Berries for topping
For brushing
1 egg yolk
2 tablespoons milk
1/2 teaspoon vanilla sugar
PREPARATION
1. Heat the milk and let it come to simmer.
2. Whisk the egg yolks, sugar, and vanilla sugar until light and fluffy. Add flour and corn starch, mix them well. Add hot milk some at a time and whisk until well combined. Strain the mixture to remove possible chunks. Heat the mixture and bring it to a slow boil while whisking continuously, until dense. Turn off the heat, add butter, and whisk until well combined. Move the mixture to a bowl and cover it with plastic wrap, let cool down, and put it in the fridge for 1-2 hours.
3. Cut the puff pastry as round shapes with a cutter. Cut half of the circles with a smaller round cutter in the centre. Remove the smaller middle circles, and assemble two kinds of circles as shown in the video. Brush them with the mixture of egg yolk, milk, and vanilla sugar.
4. Bake at 180C (350F) for 20 minutes or until golden.
5. Remove a layer from the centre or push down the centre part to provide a place for creamy filling. Sprinkle with powdered sugar, and pipe the custard in the centre. Top with berries of your choice.
6. Serve and enjoy!
