The new testament is written in Greek for the same reason the entire west and most other countries have english manuscripts for almost anything. Rome and Greece controlled the known world, therefore everyone spoke it for trade especially when under occupation from a Roman government that didn't even let Judean government speak Hebrew amongst them.

Jesus would have spoken Aramaic Hebrew as well as Greek because at that point in time during his life Greek was the main language of the Roman Empire in that area of the world and everybody had to be able to speak Greek including the apostles and Jesus. Hence why the New testament was written in Greek. Just like today. English is spoken all over the place even in countries where English is not the main language
