When you add non-stock power to a car that has precision made brakes made to stop the stock car, brake pads exploding on a racetrack is not surprising. Does not sound too shocking to me. That is why any power added has to be compensated with brakes, suspension etc.

Can you skim carbon discs? I know steel discs can be skimmed to re-face them (depending on the damage) to give a clean flat surface to use. Is this an option with ceramics?

Dude why didn't you send the rotor to a machine shop to see if they could resurface it? The scoring isn't that deep and you had nothing to lose.
