I love Japanese knife Chi, but as a knife maker, adamant user and full-time cook I can tell you Japanese knives are intended for a much higher skill set than 90% of people have. Softer, easier to sharpen, hone and use German French or Swedish knives are where the vast majority of home cooks should've spending their money. Great video and content! Well presented and just all around well done, thank you for sharing! I liked and subscribed!

Just a disclaimer to knife gifting... in some Asian cultures it's considered metaphorically "cutting off a relationship" or has other negative symbolism.

I only use stones on my Japanese knives. It won't take long to figure this out.
