I have a theory that Evil Max, as evil as he is, can protect those his "good" self cares about, or even his allies (in this case, Jimmy and Hope, since they also have a counterpart). But in the case of Nugget, as he tried to attack him with a chainsaw, despite the fact that Max is very affection of him, Evil Max still has the idea of wanting to eat Nugget to be one, because it must be his way of showing "affection"
