Creamy Pasta dishes aren't exclusively for non vegans anymore this is an incredibly indulgent Carbonara, you can't tell the difference. It has such a depth of flavours that just make you want more. If this doesn't please everyone you know we'd be very surprised.

INGREDIENTS
200g wholemeal pasta w/ water salt oil
oil
2 cloves garlic chopped finely
2 red onions chopped into half moons
handful of shitakes

100g cashew nuts soaked for 5 minutes
300 ml soy/non-dairy milk
a good pinch of nutritional yeast
1.5 tbsp tamari-based liquid smoke or 2 tbsp tamari + some smoked paprika
1 tsp salt

vegan cheese / nutritional yeast
basil (optional)

I suggest starting with the onions then adding garlic. Garlic burns very quickly!

I made these with quick home made sesame milk. Just add 50 grams sesame seeds to 200 ml water and blend. I made 4 portions, so you can go easier on the sesame if you need less. The recipe becomes significantly fattier, so I just skipped the oil and water "fried" the garlic and onions. It came out delish. Honestly I missed carbonara among the most since moving to veganism, but this recipe is just awesome and makes for a good replacement!

I’ve tried all kinds of vegan cream sauces and I find a combo of cauliflower and cashews is the best although i suppose it couldn’t be done in 5 minutes because the cauliflower needs to be steamed or boiled first.

Third~keep up this wonderful, great looking food. I like the fast, easy meals in my advanced(ish) years, 😂.
Forth~I'll be ordering your cookbook for my daughter. She will love these quick and easy recipes for she and her partner's very busy lives. He's not 100% vegan~yet. But if I know my girl he will be soon.
And for me. I read cookbooks as others read a good mystery. Except there's no murders and I get to eat what I read about! Cool! Looking forward to it.

It's all very well cooking from You Tube, but nothing beats a REAL cookbook, made of paper and photos, that you can write in additions to the recipies. I'm buying your book! Old School! xx

I only had portobellos in the house and I used sunflower seeds instead of cashews for my nut allergy and it was delightful! Thank you for the lovely inspiration!

Wow everyone needs to try this dish! It's hands down the most tasty/flavorful vegan pasta dish I've had thus far, especially considering it took no longer then ten minutes to cook! Thanks boys, better than dairy carbonara, 10/10
