Ingredients:
- Duck
Wash a duck with ginger and vodka - rub a duck with slice of ginger and vodka to get rid of a duck "aroma".

To marinate:
- Ginger
- Garlic
- Onion
- Soy sauce
Chop all into small pieces and stuff it all into a duck. Leave the duck in the fridge for 5-6 hours or overnight.

To bath a duck:
- Water
- Soy sauce
- Ginger
- Orange or mandarin orange peel
- Honey
- Turmeric powder
- Spiced vine "Rượu mai quế lộ" or Vodka
- Five-spice powder
Boil it all and then give a duck a bath for few minutes. After that the duck should be yellowed. Then dry the duck by hang it for 8 hours/overnight.

Wrap the ends of wings and legs in tinfoil so it won’t get burnt. Roast it in Air Fryer Klarstein AirVit at 200°C for 25 minutes then turn around and roast for another 15-20 minutes. You can use a regular oven with a fan turned on at 200°C for 30 minutes for each side. A time is aproximate - it depends on the weight of a duck and power of your oven so you could adjust it a little bit. The duck should have golden or brown roasted color and be very crispy. After roasting get the duck off the oven - do not leave it inside because it could get moist and lost the crispness.

Best served with rice noodles “Bun” and soy sauce with garlic and chili.
