Why after covering over the bricks with stucco did you paint over the space between the bricks? Why not simply leave the bricks exposed?

How do you know if you have the right amount of mortar between each level of bricks? Eyeball it?

What is he using to stick the tile counter top? Adhesive or just plaster mix. Is he using different mix for the brick work and plaster or just the same all over
