Korean Braised Beef Short Ribs | Galbi JJim (EP.24)

안녕하세요 여러분(Hello everyone!) Welcome back to episode 24 of Manny’s Food Channel! This Galbi JJim (Korean braised short ribs) is a very traditional dish in Korea. Usually made for special occasions, this succulent slow braised short ribs can be made with different kinds of variations and garnishes such as slivers of cooked egg, scallions, Korean chili threads and my favorite melted cheese. Not only will these fall off the bone short ribs melt in your mouth, they will also introduce some flavors to your taste buds that will guarantee you constantly going in for more. GALBI JJIM INGREDIENTS
2 kg Beef Short Ribs
2 tsp Black Pepper
2 tbsp Gochugaru (or cayenne pepper)
1 Large Onion (thinly sliced)
10 Cloves of Grated Garlic
70 g Grated Ginger
¼ cup Canola Oil
¾ cup Soy Sauce
½ cup Brown Sugar
½ cup Mirin (or honey)
1 ½ cup Cabbage Kimchi (with the liquid)
300 g Sliced Carrots
250 g Daikon Radish
100 g Roasted Chestnuts
1.5 L Beef Stock (Use as much as you need to cover all the meat)
PREPARATION
1. Soak the short ribs in cold water and leave it in the fridge overnight to remove as much impurities as possible.
2. The next day, remove the short ribs from the water, add them to a pot of cold water and bring to a simmer for 15 mins. Remove as much impurities as possible that float to the top of the pot. Once all impurities are removed, strain the short ribs and set aside.
3. In a rondeau, heat the canola oil on medium heat, sauté the onions for 5 minutes, then add in the garlic/ginger and cook for another 5 minutes.
4. Next, add in the soy sauce, sugar, mirin, kimchi, black pepper, gochugaru and beef stock. Add the short ribs back to the braising liquid once all the ingredients are well mixed.
5. Bring the short ribs to a simmer, cover with a lid and let it simmer for at least an hour or until the meat is nice and tender.
6. Once the meat is tender, add in the carrots, radish and chestnuts. Let it simmer uncovered for 30 minutes until the vegetables are cooked.
7. Garnish with green onions, sesame seeds, other garnish of choice and enjoy!
