My planes always flip upside down even when I'm not moving the mouse.

I have a joystick. I use play flight simulator 2000 loads, so I have foot pedals and a joystick as that's the reason my dad originally bought this computer 15 years ago, so he could practice his flying. After all that time playing though, I still can't land an airliner. That is the hardest thing ever.

when i first tryed to fly a plane it was when planes was first added in.
when i flew it my character started to lose health and i didnt know why.
can i get an explanation.

Here's tip change keybinds so u can go up and down make go up e down q then u can fly in third person

man i can fly it EZ r=thx bro but the controls on up and down are actually a part of the irl flying cus to go up irl you pul the stick towards ya and down push it away

Everything okay, but how do I change my controls to mouse? I don't want to use the arrow keys to be honest. Can someone help me?
