Don't touch the break lever while there is no wheel in, if you have disc breaks, you could damage your brake pads and they also will get stuck together

Qq: what do I do if the front breaks run against the rim? Readjust the tire or align the brakes better?

Great video! Really helped me when I needed to clean my bike. I've had my Orbea for 1.5 years now (June 2023) and it was a christams gift from my grandpa. Great bike, but I never really knew how important cleaning my bike was, let alone how to properly clean it beyond soapy water, sponge and WD40 (I now know a lot more lol). Although, I don't know what the chainstay is (will google). I actually have a spring which I don't know where it should be/go (will also google), anybody know?
Another commentor mentioned not touching the brakes when the wheel is out with break discs as they get stuck together. Useful advice. Also if you have alignment issues with the brakes to the wheel rim, I would just take the wheel out, watch the video again (more carefully) and try one more time. A google search on bike wheel structure might help.

You should have mentioned the little springs on the quick release skewers and which way they go back on.

We have a Trek 7.5 fx, silver color, probably the 2012 model. The quick release nut does not unscrew or turn (stuck?) so it is quite difficult to remove the front wheel. Any advice?

Will it ruin the bike over time if I did this often? I have limited storage space and taking the wheels off might help. I'm just worried disassembling and reassembling the bike too often would ruin/compromise it.
