Another possibilty could be that he did mean to kill heam, and thought the job was done when he stabbed him. He probably thought that venom wasn't stupid enough to bring eddie back to life considering venom also knew about the risk of that bringing knull back

A really nice thing i would like to point out

Riot called venom a traitor not because venom betrayed riot (though that still also makes him a traitor) but because he thought venom didnt have the balls to revive eddie and make the codex to free knull but venom was kinda pissed because he got beat up infront of the hoes and said "fuck it im making a codex just so i can beat your ass"

As to why riot didn’t eat his head idk. But I saw someone else say that riot and venom knew of the dangers of resurrecting a host, resurrection leading to a codex being made. They said riot didn’t think venom would revive Eddie but venom did it anyway.
