All the different varieties of soy sauce are hard to learn about or distinguish for me as an American, because they’re inevitably labeled in another language if I can find them in an Asian Grocery store

I’m always scared to keep all my soy sauces in the cupboard because I don’t want the quality to diminish, so I store then in the fridge. Lucas probably uses them fast enough to where he isn’t worried about it. Or is it just not necessary to refrigerate soy sauces?
