How to Make Boneless Beef Ribs Lollipops in a Charcoal BBQ

These might just be the tastiest thing i've ever BBQ'd!
In this video, i'm going to show you how to make boneless beef ribs lollipops!

You could use other suitable cuts of beef like brisket, chuck or even skinless pork belly to make meat lollipops too!

These boneless beef lollipops were seriously so good! Sweet, savoury, tender, juicy and rich, you've definitely got to give them a try!

Here's the steps for the beef rib lollipops below:
- Trimmed silver skin and fat from top of beef ribs
- De-boned the beef rib rack
- Trimmed the bone side of the meat once de-boned
- Rolled and skewered the beef rib meat
- Lightly coated the beef rib meat in olive oil
- Seasoned in my Steak Shooter Spicy and Beef Bounce
- Smoked over cherry wood for 2 hours, flipping after an hour at 250F/120c
- Lollipops into foil tray with beef stock and butter
- Cover tray in foil and keep cooking until tender
- These were tender at around 97c/208F internal
- Finished with a glaze of my Hook Shot BBQ sauce

You can use any of your favourite seasonings or BBQ sauces, however I definitely recommend my BBQ rubs and sauce!

With the beef rib bones you can either smoke them like beef back ribs or make a stock, then with the trimmings, you can trim them up extra for burger mince and then any fat you can render down for tallow.

Another great and unique vid mate, question do you put the beef stock in hot or at room temp, curious if you put it in at room temp if it slows the cook time, cheers mate
