Sheet Pan Greek Chicken
Sauce:
1/2 cup of olive oil
3 tablespoons of lemon juice
4 garlic cloves minced
1 teaspoon of Dijon mustard
Add Excaliburs Greek Seasoning
Mix together
To a bowl add chicken thighs and coat in sauce and let sit for 20-30 minutes
To an oiled pan add
Whole Red onion
1 medium zucchini
2 bell peppers sliced
1 pint of cherry of tomatoes
Add your chicken thighs
Season with Greek seasoning
Bake at 425 for 30 minutes then add feta cheese and olives
Bake for 15 more minutes or until 165 internal
