Also, the level 200 helmet ornament from Echos removes the hood on hunters as well.

Certain arm ornaments will have a red glow from the shoulders when used with the Memory of Cayde cloak, e.g. Eternal Vengeance

Another unique armor interaction is for the "Eternal Vengeance Grips" Hunter Universal Ornament from eververse, combined with a lot of older hunter cloaks it will have an extended red glow coming out from the shoulders.

If you want a no cloak look on the Hunter use a helmet that removes the hood and for the cloak use the Refugee Cloak ornament if you have it unlocked.

The assassin's creed arms for titan have the hidden blade on the forearm extend when you melee, don't think I've seen another arms do something like that.

Theres actually 5 helemts that remove the hood from a hunters cloak.
The 5th is the Chromacloak Visage (Tier 200 rewards for Episode 1:Echoes)
