Do people ever ask him, "Hey, I really appriciate the 7.9. What is it that I can change to make it an 8.2+?" THAT is the pizza you name after him. That way you can keep your regulars happy, AND have something new if people like that. The people on top of the world have a vision, but they always at least listen to others.
