We totally understand your no.1. Bookends Theme is a magnificent song, and I think I ain't the only one who likes to listen it with Old Friends. Some of my favourites missing from your list are A Hazy Shade Of Winter, Scarborough Fair and Leaves That Are Green. But when it's top 10 it's understandable since there are so many great tunes.

I understand your choice, though I could not make an order. The boxer - for me - is outstanding, but 20-30 of the other songs are very great (e.g. sparrow; Kathy's song; the most perculiar man - not mentioned yet, i would guess) and it depends on my mood to define one as my favourite one (for the moment).
But Bookends is outstanding, too. It is about childhood's quality. Like many other songs, when the guitar begins, it captures you (especially in combination with oldfriends). Paradise lost.

I can understand you for the number one ( for me it will sound of silence, because if I never heard this song, I will propably not listening music :) )

I think that Bookends and Old FRiends are important song ( " old friends live on stage ", in 2003 )
