Refried Bean Redemption:

A quesadilla is a Mexican dish consisting of a tortilla that is filled primarily with cheese, and sometimes meats, spices, and other fillings, and then cooked on a griddle or stove.

I used Follow Your Heart Cheddar Shreds, Rosarita Vegetarian Beans, Guerrero Riquisimas Tortillas, Forager Vegan Sour Cream and Valentina for the sauce. So yes, everything is vegan! And yes I know scratch beans are better. I've made them. I also like the canned beans since I grew up with them. They are also ready in 3 hours less time.

Nothing is more nostalgic and comforting than what your mom considered a “phoning it in/doing my best” meal. Especially those of us that had working and/or single moms. I don’t think they realize that the times that they were just trying to keep us alive are parts of some of our best memories ❤

My mom makes these pizza pocket things were essentially just tortillas cheese sauce and pepperoni fried up on a skillet. To me they are the best things ever, when I had to move back in after a failed attempt at living alone she asked what I wanted I'd ask for those. Fucking cried because I missed her cooking so much after meals of ramen and God knows what else I did to survive. It's simple it's easy it's nostalgic And It Felt Like Home Again. ❤

My family immigrated from Mexico with 5 children at the time and my grandma was and still is the queen of budget meals. I swear she can turn 2 ingredients into the most delicious dish. But her chilaquiles are my favorite. Omg my mouth is watering just thinking about it. My uncle who lives out of state told me my grandma always had a pot of beans cooked everyday. And she could make a weeks worth of food ❤️
