Hey, I'm no pro welder but as others have said, I was taught acetylene first on, first off. In any case, the rest of the video was spectacular. To properly start an oxy-acetylene torch, first open the fuel gas (acetylene) valve slightly, then ignite the flame with a striker, and finally slowly add oxygen to adjust the flame; when stopping, always turn off the oxygen valve first, followed by the fuel gas valve to prevent flashback.

When turning off i turn the fuel off first. Prevents back burn in torch or hoses.

Why do I keep seeing people turn off their torches 2 different ways?

Acetylene off first then Oxygen.

Oxygen off first then acetylene.

Why is the industry not rock solid on what the proper way to do it is???

This is how youd get taught at college but the gauges dont work at all work places so at work i get taught to set oxygen pressure by testing it out on ur skin. As for the acetylene i got taught to always have the gauge set at the maximum. And as for lighting it i got taught to turn on oxygen and acetylene not just the acetylene because it will give off less s### in the air cus u have already turned on both in the first place so no black smoke will be given off at all
