A cool trick I learned which probably isn’t traditional, but if you forget to use day old rice, you can cook some white rice, spread it thinly across a baking sheet and place it in the freezer before cooking it in the wok using the same steps he’s showing. I’ve tried it twice and my rice didn’t stick or anything came out as needed !

You should always put your sauces on the outside of the pan and rice, and then incorporate the sauces into the rice by mixing it around, which is proper technique or fried rice
