For anyone wondering how this works, limes and most other citrus fruits contain a natural ingredient called Pectin which helps sugar and acid coagulate to become a gel. Limes actually mostly contain pectin in their skin, so you'd have much more of a jammy/stickier texture if you used something like grapefruits, lemons or oranges. Or you can buy Pectin individually as an ingredient and learn a little thing or two about molecular gastronomy along the way. Hope this helps :)

Thank you for this recipe. My family is enjoying the different flavors I made with orange and bluberries as well for those people who have burnt the jamm Just cook it at a lower temp, and I move it from time to time and check on consistency desire. Then, I removed it immediately ❤

Learning cooking from YouTube is the most frustrating thing I’ve ever tried..I thought I did exactly what was in the video and I burned mine. Ffs I need more specific information. It’s just so frustrating. Almost ready to throw in the towel and just door dash everything. :-/

I don't mean to be rude, but you really don't want your jam to ever stick to the bottom of your pot, and it is not a method to tell whether your jam is done or not. It's important to stir constantly throughout the entire process and adjust the heat as soon as it starts to stick, as that is the earliest sign that your jam is burning. Reduce your jam until it has thickened enough to pass the "cold plate test."
