When you said "spaghetti alla bolognese" all at once, it sounded absolutely perfect. I think you're at a point in mastering the language where you speak so naturally that when you ease pronounciations, you do so in an actually Italian way.
I know it's impossible not to overanalyse when studying languages but you have the right intuitions about it, start trusting them more!
