The inside needs to be gooier, outside should be deep golden brown all over. Hard to achieve, impossible to forget.

Normally I agree with you but this time no. The marshmallows should extra toasty and gooey enough to melt that chocolate. Dark chocolate is best.

I like mine with dark chocolate and more overall browning on the marshmallows where the inside pulls away from the firm brown crust

Cool and firm chocolate means it crushes as you bite it, squeezing out the marshmallow and leaving both a mess and the last bites as just chocolate and graham cracker.

Here's an idea I've not tried but sounds delicious...substitute peppermint bark for the chocolate.

Proper toasted marshmallows are done over coals. The browning comes from radiant heat, not flames. It's like using a pizza oven instead of a creme brulee torch.
The perfect toasted marshmallow has a sticky core, a molten foamy goo of a "magma"/middle layer, and a uniform crust of a tan color that tastes _completely different_ from a raw marshmallow. If this chef thinks this "toasted" marshmallow is "perfect", then he has never been to a bonfire/campfire & I pity him.

I only use dark chocolate for s’mores, helps to balance the sweetness 😊

Why would one want cool, solid chocolate? I put it all together and back over the heat for 30 seconds to get it melting together. Also, PB cups or Andes mints are game changers

I like my marshmallow’s to be like that SpongeBob scene where Patrick keeps blowing hot marshmallow goo into squidward’s face. If it doesn’t burn my mouth I don’t want it 😂
