BBQ CHICKEN SALAD! 🍗🥗 Even salad haters love this one. It’s the chips! {Sunday Salads, Episode 12}

This mason jar BBQ chicken salad is perfect for meal prep and summer days on the go! Juicy grilled chicken, black beans, sweet corn, and cherry tomatoes are layered with a creamy BBQ ranch dressing. Top it off with romaine lettuce and crunchy tortilla chips for an irresistible crunch!

YOU’LL NEED

-2 boneless, skinless chicken breasts, pounded 1/2 inch thick
-2 tsp extra-virgin olive oil
-½ tsp kosher salt
-¼ tsp ground black pepper
-2 T homemade or store-bought barbecue sauce
-6 c chopped romaine lettuce
-1 c cherry tomatoes, halved
-1 c canned low-sodium black beans, rinsed and drained
-½ c canned Mexicorn, drained
-¼ c diced red onion
-Crushed tortilla chips or strips for serving
-Chopped fresh cilantro for serving

For the BBQ Ranch Dressing:
-⅓ c prepared light ranch dressing (Greek yogurt–based works great)
-1 T homemade or store-bought barbecue sauce

Grill the chicken, brushing it with BBQ sauce then dice. Mix the dressing ingredients together. Layer the salad ingredients in mason jars, starting with the dressing on the bottom, followed by black beans and ending with romaine. Top with crushed tortilla chips. Store in the fridge for up to 3-4 days for easy, on-the-go meals!
