Cowboy Caviar:
Ingredients:
1 8 oz block of sharp shredded cheese
2 cans of Mexicorn or Southwest corn (drained)
1 can hot Rotel tomatoes
6 green onions (sliced)
1/2 cup sour cream
1/2 coup mayo
*original recipe calls for 1 cup of each mayo/sour cream*
Directions:
Cut your green onions and add to a large bowl. Shred your entire block of cheddar cheese and add it to the bowl with the green onions. Add your Rotel and drained southwest corn. Add your 1/2 cup of sour cream & mayo and mix well. I found this tasted better chilled the next day when the flavors combined. Serve with Fritos & enjoy!
