To Make Peanut Coconut Chutney
Oil - 2 Tsp
Peanuts - 1 Cup
Green Chilli - 10 Nos
Garlic - 4 Cloves ( Optional )
Tamarind
Roasted Gram - 2 Tbsp
Coconut - 1 Cup
Rock Salt - 1 Tsp
Water
For Tempering
Oil - 3 Tsp
Urad Dal - 1 Tsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1/2 Tsp
Red Chilli - 1 No.
Hing / Asafoetida - 1/4 Tsp
Curry Leaves
Method
1. Heat oil in a pan and fry peanuts.
2. Once the peanuts are fried, add green chillies and fry them.
3. Add garlic. Add four –five pieces of tamarind.
4. Allow the fried ingredients to cool.
5. Transfer to a mixer jar and grind peanuts, grated coconut, rock salt without adding water.
6. once it is half done, add water little by little and grind well.
7. To a tempering pan, add oil add urad dal, mustard seeds, cumin seeds, red chillies, fenugreek powder, curry leaves and add to the chutney.
8. Delicious peanut chutney is ready to serve with hot idli or dosa.
