My mom makes one very similar, it’s corn, 3 bell peppers, half a red onion, black eyed peas, black beans, and white beans. The dressing is apple cider vinegar, a cup of sugar, and salt and pepper

Ok, in my part of PA we call this Texas caviar and my family has bought this for years. I'm so surprised that Texas caviar is unheard of for so many people. This is just a normal thing here.
