Halal and haram is slightly different from what a person could consider comfortable or not aquiring, a topic of halal and haram is bigger than a personal opinion without a little research of the technicalities. However, there are two issues I would like to rise:
1. The ayah you referred to does not have that meaning that you argued with;
2. The problem of SHIB is not high volatility but lack of transparancy in staking proces and in the fact that SHIB is native coin of Shibaswap - that both have prohibitions due to riba (interest) elements.
