Talk seems to focus on the production on vocal sound, and speak seems to emphasize conveying information.

"Did you speak to Jim recently?" assumes a topic to be discussed.
"Did you talk to Jim recently?" could be an inquiry if you've seen him recently.

Plz can u tell me about the difference between this and that? .. I mean where to use them ?

Talk implies a listener or as part of a conversation.
Speak does not assume there is anyone listening nor the use of intelligible language. A dog can speak but a parrot can talk if it knows English (or some other human language).
