Not only the Orion Syndicate, but the Nausicaans, Ferengi and even the Breen engage in the acts and often target cargo vessels.

I like the mention of Ferengi specifically... adorable little monsters that they can be. After all, the difference between a Ferengi Pirate and Privateer boils down to being successful and paying the right bribes.

I would love a star trek show based around civilian freighter crews fighting pirates and all of the other things we dont see like civilian travel/cruise liners round the galaxy

Longtime watcher here: I would love it if you could talk about any independent ships you find in the Star Trek universes. This could be the Hansens' exploratory vessel (USS Raven), the merchant freighter that was blown up by Klingon commander Kruge in "Star Trek III: The Search for Spock", the ship Travis Mayweather was born on (ECS Horizon), or any others I missed in this request.

I was about to comment suggesting that space piracy seems unnecessarily risky considering how fragile a spaceship's life support really is. Then I realized that keeping air inside the hull is pretty important for ships on the ocean, as well. Sure, you can't tread vacuum, but most sailors and/or pirates couldn't tread water either.

I've always loved that in a universe with replicators, the only things that really have value are materials that can't be synthesised. It's a nice little detail that makes the need for trade between the Federation and other powers realistic.

I wonder if pirates employ the same tricks they do as in the universe of Starsector, namely posting fake cargo transport missions and sending out fake distress signals to lure in unsuspecting captains.

It would be interesting to see a show centered around the fringes of Galactic society. Not that I exactly trust the current show runners to do it

Well, in a certain fashion, the UFP would be a global power with the need of defending their "Ruta de Indias" and "Galeon de Manila" space routes from the analog of French, Dutch and British corsairs and pirates. And a humorous question: The Ferengi tongue is related to the Netherlands' speech?
And the Fed in a certain amalgamate of the USA, USSR and in a certain character, the Spanish Empire, with the difference that the incorparation of the new (inter)stellar autonomous provinces isn't by conquest, but by voluntary integration of the incorporated nation entity in the federation.

I definitely want to hear to discuss about the Emerald chain and piracy in the 32nd century. Like Burnham and s.o are labeled as couriers but dabbled in some aspect of piracy.
